Serves 4
Ingredients
1 cups quinoa (you can use white, red or tricolor)
2 cups water
Pinch of salt
Juice of 1 lime
3 tablespoons honey
2 tablespoons fresh mint, chopped
4.5 cups mixed berries and chopped mango, or whatever other fruit you prefer!
Method
Rinse the quinoa really well in a sieve, otherwise it can taste a little gritty when cooked.
Add the quinoa, water and salt to a saucepan and bring to the boil over medium heat.
Boil for 5 minutes, then reduce heat and simmer with the lid on for about 15 minutes.
Remove from heat and use fork to break up any lumps.
Leave lid off and allow to cook.
In a separate bowl, mix together the lime juice, honey and mint to make a dressing.
Place the cooled quinoa in a large bowl and add the fruit. Pour the dressing over the quinoa and fruit and mix.
Divide into 4 separate bowls and serve with a garnish of fresh mint
